Welcome:

Welcome to Introductory Nutrition online. This site is for students who are considering this course or have already registered.

Course Description:

This class will be a study of nutritional needs across the life span. The course will focus on the basic nutrients (fat, carbohydrates, protein, minerals, vitamins and water), food sources and nutrient utilization in the human body. There will be emphasis on nutritional needs for infancy to old age and during common life cycle occurrences. The course also includes applied and controversial aspects of human nutrition.This course is transferable to four-year colleges.

  1. Textbook: Sizer/Whitney, Nutrition: Concepts and Controversies, 10th edition.
  2. CD-ROM: Diet Analysis Plus 8.0 Win/Mac
  3. Course Packet: available in the bookstore

Course Availability:

The course will become available the weekend before CR classes begin on January 22 and remain accessible through final’s week ending May 17.

There are no requirements to attend on-campus meetings. All exams will be online.

Computer Set-Up and Skills

Your Computer Skills: Online courses require adequate computer skills. You should be able to navigate websites, open and download files, use a word processor and be able to convert files into rich text format, and submit files to Blackboard. It is the student’s responsibility to meet the technological demands of the course.

Computer Requirements: Most computers and internet providers are adequate. You will need Flash or Quicktime to watch video lectures, but you have the option of watching the lecture videos on the campus computers or reading the available text transcript if you don't have this software. I would recommend broadband services through cable, DSL, or satelite providers. You can still take the class if you have dial-up internet access, but you will need to take exams on a more reliable internet connection. You need to have regular access to the internet at least twice a week for 15 weeks.

Online Commitment: 

Your commitment will require at least as much time as you would dedicate to a traditional class. A typical 3 credit hour class will require about 9 hours per week of your time. For this class your weekly requirement will be to read the textbook chapter and the associated lecture notes, watch the lecture video (or read the video transcript) and participate in weekly online discussions using the discussion board. You will take multiple exams throughout the semester and a Final exam online. The Diet Study project is a semester long project involving the analysis of your own diet.

Waitlist Policy:

Registration is easiest online using Web Advisor. There are two sections of this class and I have increased the class capacity for both above normal capacity, so I will not be keeping a separate wait list. If the class is closed, I will direct you to web advisor and encourage you to keep trying to add the class. The class will open and close during the winter break depending on the number of students who drop the class before it begins. As a result, although the class may be closed you should check periodically as it will open whenever someone withdraws. This class fills quickly, so I recommend registering as soon as registration begins.

Accommodations:  

If you need accommodations to succeed in this online class you should contact Disabled and Student Services Program at 707-476-4280 and the instructor. This course is designed to be accessible to students who have visual or auditory impairments.

Classroom "Time": 

This online class requires weekly participation consistent with the College’s semester schedule. The class will be available at any hour, but will still have "due dates" for specific assignments or exams. Otherwise there is no requirement to participate at any specific time.

Getting Started: 

 

On or shortly after the College’s first day of class on January 22, go to the Blackboard login site at http://bb.redwoods.edu/. Username and password instructions are available at this site. After you login you will find a link to the class where you will receive detailed instructions on how to proceed. You must participate fully by the end of the first week (Sunday) or you may be dropped from the class.
