This comprehensive one-day workshop assists restaurants and other food handling businesses in complying with AB 1978/Campbell. Fees include textbook, food safety and sanitation instruction, demonstrations and certification examination fee. Register with adequate time to read the textbook before attending class. Please bring a photo ID and your book to class. This course does not meet the prerequisite or graduation requirements for Hospitality, Restaurant,& Culinary Arts certificates or degrees. Spanish edition of text is available upon request.  Please bring a photo ID and your book to class.

Culinary Fundamentals: Entry-Level Professional Cooking

This class will include the basic concepts of culinary techniques and cookery found in a modern commercial kitchen. Emphasis to include safety and sanitation, knife skills, mise en place, moist and dry heat cooking methods, and basic techniques for healthful cooking. Students will sit for the ServSafe Food Handler Card test: a requirement to work in the food service industry. Upon completion students may seek employment in restaurants, cafeterias, hotels, health care facilities, educational institutions, and more.

Training will take place in a professional kitchen at the Tish Non Community Center through a partnership with the Bear River Rohnerville Rancheria. All students will receive an apron to keep.

Students must adhere to the following dress code:

  • Long Pants
  • Closed toed shoes
  • Long hair tied back or up
  • No dangling jewelry or large rings
  • Good personal hygiene
